Honeycomb, or Hokey Pokey!

Mmmmm…crispy crunchy bites for a snack or crumble on some ice-cream.

   Ingredients

1 1/2 cups of white sugar

1 1/2 tablespoons baking soda

4 tablespoons golden syrup

Instructions:  Pour sugar and four tablespoons of golden syrup in a pot and swirl to mix on medium high heat. Do NOT stir. Swirl!

Watch until it turn a slightly amber color. That’s it!  Take it off the heat and add one a half tablespoons baking soda and whisk real quick. You’ll see it froth and bubble! Pour onto wax or parchment paper and leave to cool down until hard then break it up! To speed it up, place it in the fridge for ten minutes.

Crepe with Chocolate Sauce and Bananas


Nothing says chocolate like a jar of Nutella, but i knew better than to go rushing out to buy one. Don’t get me wrong, i adore Nutella but having some around the house would be the greatest sin! Instead, i made a small portion of chocolate sauce and a few crepes to satisfy my husband’s sweet tooth. Ok, so i had a bite, but that’s it! I am still watching my weight.
Here’s the recipe.

Crepe batter:
1 cup of flour
2 eggs
1/2 cup milk
1/2 cup water
1/4 teaspoon salt
2 tablespoons of melted butter

First mix all the liquid ingredients then add the flour in portions. Get a non-stick pan and turn on heat at medium high. Using a half cup measuring cup, scoop the batter and pour into middle of the pan and swirl the pan widely so that it spreads evenly across. In a minute or less you should be able to flip the crepe with a spatula. Brown both sides.

Chocolate sauce:

2/3 cup unsweetened cocoa
1 2/3 cups white sugar
1 cup milk and half a cup of heavy cream
1 teaspoon vanilla extract (optional).
Add all ingredients in pot and stir under medium high heat until it boils then turn off heat and you’re done!
If you find the mixture to be a little grainy, pour it in a sieve.
You can make it creamier by adding more heavy cream.
